Do yourself a favor. Go to the grocery store and buy some high-quality hamburger buns. And maybe a couple of habaneros. Then go home and order the Dr. Pepper barbecue pork from Harley in Laguna Beach.
The pork stars in of one of the restaurant’s meal kits, which also include a couple of side dishes like excellent Mexican-style corn on the cob or crunchy potato salad. And you can add a dozen cookies, too. The pork shoulder is braised in Dr. Pepper, the acid in which persuades the meat to break down and become incredibly tender. There’s a swirl of aromatic spice in the meat that reminds me of really good cochinita pibil in the Yucatán. Chef Greg Daniels’ pork is sort of like a cross between cochinita pibil and classic pulled pork barbecue. It is outstanding.
Dr. Pepper is a very sweet soda, though, and all that sugar doesn’t just vaporize when cooked. So you’ll probably want to have a habanero handy, or perhaps some pickled onions, neither of which come with it, so you’ll have to improvise.
And while it’s not sold as a sandwich, this pork squeals out to be stuffed into a bun. You’ll kick yourself if you don’t have any in the pantry.
