Jack’s BBQ Opens a Fried Chicken Offshoot in SLU

Local smoked meats mini empire Jack’s BBQ is getting into the fried bird game. Jack’s Chicken Shack quietly opened out of the barbecue joint’s South Lake Union location as a kind of pop-up/ghost kitchen. It has a separate menu (and website) from Jack’s, with fried chicken sandwiches, tenders, and a chopped salad on offer. “COVID hit us hard, to say the least, and was the catalyst for launching Jack’s Chicken Shack,” says Stew Navarre, vice president of operations, adding that the restaurant was looking for ways to expand its takeout offerings. The glaze on the twice-fried birds is reminiscent of Nashville hot chicken (with a sweet touch), soaked in buttermilk brine and dredged in a spiced flour blend, and there’s a selection of sides, such as collard greens and honey butter cornbread. The shack has no posted — just a QR code with chicken logo. DIners can get the food to-go through a sliding window at Jack’s, preordering through GrubHub or Caviar.

White Center Is About to Get a New Vegan-Friendly Farm-to-Table Spot

Bloom Bistro, a new all-day farm-to-table restaurant that emphasizes vegan dishes, is opening in White Center soon. It takes over the space formerly occupied by a Biscuit Bitch location, and will begin previews this weekend with a short menu of breakfast and lunch items. “Our intentions at Bloom Bistro are to foster and support our community in every way possible,” says co-owner Marisa Figueroa. “We’ll be working with only local suppliers, and most of them are either women or queer-owned.” (One of the farms Bloom Bistro is working with is Salsa de la Vida, which specializes in all the ingredients that make up salsa.) Among the items to start for takeout-only will be vegan biscuits and gravy, blueberry waffles, and naan topped with housemade ricotta, but the menu will rotate seasonally.

Juice and Grain Bowl Cafe Bounty Kitchen Expands to Capitol Hill

In other health-conscious restaurant news, Bounty Kitchen — which focuses on ingredients sourced locally for its juices, grain bowls, scrambles, and vegetable hashes — is planning to open its third location on Capitol Hill in the near future, reports Capitol Hill Seattle. It will take over the former Tallulah’s space, which closed abruptly late last year, focusing on mainly takeout and delivery to start, with an eye on easy access to outdoor seating. The other outposts in Queen Anne and Denny Triangle are still open for to-go orders.
