Taquiero Taco Patio in Irvine maintains one of the most impressive trompos in Orange County. The trompo is that vertical rotisserie that resembles a giant, spinning top. The spit is stacked with layers and layers of marinated pork al pastor, which caramelize and char as the trompo slowly spins. (They have one loaded with chicken, too.) 

I’ve always wanted to raid their kitchen and abscond with that entire trompo. Sadly, I’m not daring enough to do that. 

However, I now have the next best thing. The Tijuana-inspired taqueria now offers a family-style takeout package, which comes with a substantial boxful of the meat of your choice, including pork shaved to order from that spit.

They give you everything you need to assemble tacos at home for days. If you have teenagers, your mileage might vary, of course. The kit comes with a dozen freshly made tortillas, two pints of salsa (one hot, one not), refried beans, rice, chopped pineapple, onions and cilantro, plus chips and guacamole.
