Top Chef alumna and Dallas-based chef Tiffany Derry is opening her first restaurant in Austin at the new food hall in H-E-B Mueller. Roots Chicken Shak, which focuses on duck fat-fried chicken, will open in August at 1801 East 51st Street.
On the menu at Roots are fried chicken wings, fried chicken strips, and chicken sandwiches. There are also salads (a caesar and a Cobb), desserts like cookies and banana pudding, and drinks like sweet tea.
The H-E-B food hall, dubbed Main Streat, will also feature the chain’s popular barbecue spot True Texas BBQ; Calle Taqueria, which serves street tacos; Yumai Japanese Grill, which will have rice and noodle bowls and skewers; and The Meltery, a grilled cheese restaurant. There will also be a bar with beer, wine, cocktails, and snacks.
This is the second location of Roots, with the first at Legacy Food Hall in Plano, which opened in 2017.
Derry competed on the seventh season of Top Chef, where she placed fifth and was voted the fan favorite. She also competed on Top Chef: All-Stars, where she placed eighth. She serves on the James Beard Foundation’s Impact Advisory Board, the Food Policy Action Board of Directors, and is an ambassador for the Beard Foundation’s food waste initiative. She is also working on another restaurant, Roots Southern Table, in the Dallas area.
H-E-B will celebrate the food hall’s grand opening in late August with a donation to Urban Roots and the hospitality and culinary arts program at Travis High School.
