Cochon 555, the annual culinary event that celebrates heritage pork with nose-to-tail cookoffs in cities around the U.S., is going virtual this year.
From Oct. 7-9, three San Francisco chefs — Lorenzo Camaal of Merkado, Kim Alter of Nightbird and Dirk Tolsa of Epic Steak — will turn their porky expertise into interactive, cook-along dinners via Zoom. Think dishes like braised pork shank, roast pig with confit, house-made smoked cocktail sausages, warm squash salad with bacon-fat vinaigrette and chorizo-stuffed peppers.
“Regretfully, as the COVID-19 pandemic continues to disrupt our lives and community, we recognized we could not produce our event tour as we had hoped,” event CEO Brett Friedman said in announcing the lineup. “As a result, we decided to create a carryout program with an online component as a creative alternative for our fan base while supporting local restaurateurs, and raising awareness for heritage breed pigs.”
That means, yes, virtual sessions but real food. Pork lovers will receive their choice of multi-course dinners — one cook-along-with-the-chef dish; the others will be prepared for you — plus wine and a cocktail kit. Diners may pick up their kit at the restaurant or have it delivered for an extra fee within 25 miles. (Admit it: Those of you who live further out have been looking for an excuse to drive into the city.)
Cochon will donate 80 percent of ticket proceeds to the participating restaurants.
