HiHo Cheeseburger will be adding a chicken sandwich to its menu starting this Saturday. “The Willie Mae” chicken sandwich, a collaboration between HiHo Cheeseburger and New Orleans institution Willie Mae’s Scotch House, will only be available for dine-in and takeout through the weekend in Mid-Wilshire, with delivery and pick-up on Postmates and HiHo Mobile beginning on Monday, September 28. HiHo’s Santa Monica location will add the sandwich in October, but the special won’t last forever — the sandwich leaves menus on November 30.
While Willie Mae’s Scotch House has been serving fried chicken since the 1970s, this is the first time that the legendary restaurant has dreamed up a fried chicken sandwich. The creation of Kerry Seaton-Stewart, great-granddaughter to founder Willie Mae Seaton, and HiHo Cheeseburger’s founders Jerry Greenberg and Lowell Sharron, the sandwich includes breast meat, bread and butter pickles, a honey drizzle, fresh red cabbage, and a tangy sauce, all on a toasted brioche bun.
“We are Willie Mae’s biggest fans, so bringing a small part of that legacy to Los Angeles is really special for us,” says Greenberg. According to a representative, Seaton-Stewart will be coming to LA every month to ensure the “quality and secrecy” of her great grandmother’s recipe. The sandwich will also be served concurrently in New Orleans at both Willie Mae’s Scotch House and Willie Mae’s at the Market.
