1 center cut pork loin roast (3-4 pounds)
1/2 tablespoon ground sage
1/2 tablespoon ground thyme
1/2 tablespoon ground rosemary
1/2 tablespoon ground oregano
1/2 tablespoon smoked paprika
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1/2 cup mayonnaise
Instructions: Heat smoker to 300 degrees using wood of choice (apple, oak and hickory are good options).
Remove pork loin roast from packaging and dry with a paper towel.
In a small bowl, combine the sage, thyme, rosemary, oregano, paprika, salt and pepper for the herb mixture. Rub all sides of the pork with mayonnaise, and generously apply the herb mixture from the bowl.
Place the pork roast in the smoker with lid closed and cook for 2 hours, or until the temperature registers 145 degrees at the thickest part. Remove and allow to rest for 5 minutes.
Slice into 1/2-inch slices and serve.
