The burgeoning Nashville hot chicken trend taking over Houston has now expanded to Katy. Urban Bird Hot Chicken, at 21788 Katy Freeway, opened in mid-September, serving up dishes like hot chicken and waffles, Urban Fires topped with white cheddar mac and cheese, chicken and pickles; and a spicy chicken sandwich in five different heat levels, from Country (no heat) to Fire in The Hole, the hottest. The restaurant also serves sweet cream frozen custard in waffle cones and shake form.
The restaurant is the brainchild of Brandon Charles, a longtime restaurant franchisee who lives in Hempstead. A couple of years ago, while on a trip to Las Vegas with his wife, Charles ate Nashville hot chicken for the first time, in the form of a chicken and waffle sandwich. He was immediately hooked.
After searching for a similar sandwich in Houston, and seeing how popular places like Mico’s Hot Chicken had become, he decided to start his own hot chicken spot in Katy. He said he undertook more than 60 cooking experiments to come up with the juiciest, most flavorful chicken, complete with that crunchy, spicy breading Nashville-style hot chicken is known for.
Urban Bird’s dishes spare no detail. In addition to the obsessively perfected chicken, Charles uses a family recipe for the restaurant’s kale coleslaw, puts extra-thick pickles on the hot chicken sandwiches, and came up with a special secret sauce recipe to top off each dish. Each sandwich is served with a brioche bun made by a local bakery.
“I was really picky,” Charles said. “I really wanted to nail every area.”
In its first month, Urban Bird has already been so successful that Charles is already thinking of expanding, and seeking spots in other areas of Houston. The restaurant joins a slew of hot chicken joints that have sprouted up throughout Houston, including Mico’s, Main Chick, and early entry Rosalyn’s, which was founded in 2016.
