Local beef jerky company opens production plant in Louisville - WLKY Louisville

Pap's Beef Jerky opened it's first production plant in Louisville.Founded in 2012 by Jim Richardson, Pap's Beef Jerky is being made from start to finish at a facility on Crittenden Drive near the Louisville Muhammad Ali International Airport."We wanted to be able to make our beef jerky," said Richardson. "We wanted to be able to say it's ours."The jerky is sliced, marinated, seasoned, smoked, cut and bagged and shipped from the new plant. The team starts by running beef through a slicing machine. Richardson is proud to say that this is the only automated part of the process. The rest, he said, is done by hand."We have a close eye on everything," said Richardson. "We actually see the product."Pap's new home has been completely renovated to support making good jerky. Richardson said that takes time.A team of nine people help crank out more than 10,000 bags of jerky each week.Richardson said they're adding another smoker to the mix so they can make more jerky and also plan to double the size of their team.Pap's Beef Jerky comes in four varieties: hot, Pitmaster, Grippo's and mild.The plant will also be a distribution hub for two potato chip brands, Grippo's and Spudz.Pap's Beef Jerky also has a purpose. The company donates of a portion of sales to Friends of Metro Animal Services Louisville (FOMAS)."If we can help them spread their word, help them with a few dollars from our website purchases, everybody wins," said Richardson.
