My Leader Yummy – Cajun Pork Tenderloin with Roasted Vegetables; Four-Ingredient Cheese Drops - Leader Publications

If you like a good pork roast but really can’t use a large chunk of meat, a smaller pork tenderloin is a great choice. You can even get pork tenderloins already seasoned with various rubs or marinades. Another advantage to tenderloins, as the name implies, is that they’re very tender, which means they’re easy to slice.

And, there’s nothing like roasted vegetables to go with a tasty cut of pork. Carrots and potatoes are the typical choice, but why not try something different? If you use zucchini, sweet potatoes and small, whole onions instead, the flavor will amaze you.

Best of all this meal is easy to make and can be ready in less than 45 minutes.

While the oven is hot, you may want to make these Four Ingredient-Cheese Drops to go with your meal.

CAJUN PORK TENDERLOIN WITH ROASTED VEGETABLES

2 teaspoons Cajun or Creole seasoning

1 pound pork tenderloin

2 medium sweet potatoes (about 3/4 pound)

4 small zucchini (about 1 pound)

1 1/2 cups frozen small whole onions

2 tablespoons margarine or butter, melted

1/2 teaspoon dried thyme leaves

1/4 teaspoon salt

Heat oven to 425 degrees.

Rub Cajun seasoning into pork. Place in ungreased 15 1/2-by-10 1/2-by-1-inch jelly roll pan. Insert meat thermometer horizontally into center of thickest part of pork.

Cut sweet potatoes and zucchini lengthwise into quarters. Place sweet potatoes, zucchini and onions around pork. Drizzle margarine or butter over vegetables. Sprinkle with thyme and salt.

Roast uncovered about 35 minutes or until thermometer reads 160 degrees. Loosely cover pan with aluminum foil and let stand 10 minutes. Cut pork into thin slices and serve with vegetables.

FOUR-INGREDIENT CHEESE DROPS

2 cups baking mix (like Bisquick)

2/3 cup milk

2/3 cup grated sharp cheddar cheese

1/2 stick margarine, melted

Spray baking sheet with non-stick spray.

Mix together the baking mix, milk and cheese.

Drop one heaping tablespoon of dough for each biscuit onto baking sheet.

Bake at 400 degrees for 10 minutes or until slightly browned.

While warm, brush tops of biscuits with the melted margarine. Serve hot.
