In a collaboration called Closing the Loop Pork Share, Nine Pin Cider Works in Albany supplies apple pomance, as the solid matter left over after pressing apples for cider is known, to Sollohub Family Farm in Averill Park to feed the farm’s ethically raised pigs. According to promotional material, “The diet imparts a uniquely sweet flavor to the finished meat.”
The two businesses are offering a CSA-style pork share, available in late February, that includes includes about 14 pounds of pork cuts and products, including chops, ham steak, kielbasa, hot dogs, links and loose sweet Italian sausage, links and loose breakfast sausage, bacon and ground pork. The package also comes with one four-pack each of Nine Pin’s Signature and Ginger ciders.
The price is $150. Order online by Feb. 10 for pickup at Nine Pin’s cidery in Albany’s warehouse district on Feb. 24. Shipping is also available for an extra cost. For a preview, visit Nine Pin on the evening of Thursday, Feb. 4, for Nine Pin-marinated pulled pork sliders and to meet the Sollohub family.
