Maverick’s Real Roast Beef in Roseville has long been a destination for its sandwiches, onion rings and more.
Now, the owner is adding a Stillwater location. Owner Tim Hughes has secured the former Taco’s Fresh space off Stillwater Boulevard just north of Minnesota 36.
“I’ve been looking to expand in the east metro,” he said. “And then this place came along and the rest is history.”
The menu will be the same as in Roseville with items such as roast beef, pulled pork, turkey and brisket sandwiches available in quarter- and half-pound sizes. The menu at Maverick’s was also recently expanded to include chicken wings, ribs and a chicken sandwich. Those items will be offered at the new location as well.
Also like the Roseville location, the layout will include an open kitchen and the concept will be fast-casual, in which you order at the counter and your food is brought to you.
Before the doors open April 1, some light remodeling is wrapping up.
Hughes couldn’t be more stoked to continue the tradition of a restaurant brand he loves. He took over the concept after longtime owner Bret Hazlett, who opened the restaurant in 1999 with his brother Bart, planned to close the restaurant in early 2018. Hughes was not only a restaurant veteran at the time, but also had been a longtime customer.
“It was one of my favorite restaurants… I’m really happy,” he said. “I took a big risk. The community stepped up and supported it and now we’re able to grow and I’m thankful for it.”
As word spread on social media this past week that Maverick’s was adding a location, invitations started pouring in from fans urging Hughes to set up shop in their city. And just so you know, he’s not ruling anything out.
“I’d like to get something in the northern suburbs and then something for the west metro, too,” he said.
