What's Cookin'?: Pork with Greens and Beans [Recipe] - womiowensboro.com

You've surely heard of the dish Pork 'n' Beans, right?  When I was kid, I remember having that a lot. Well, today, in our weekly What's Cookin'? segment presented by Kentucky Legend here on WBKR, our friend Kelly Bland, from the UK Cooperative Extension Office here in Daviess County, is sharing a fun twist on that recipe.  We're adding some greens to the pork and the beans.  Here's how to make Pork with Greens and Beans!

PORK w/ GREENS AND BEANS

•1 tablespoon olive oil

•1 pound boneless pork butt

•3 cups low-sodium chicken broth

•1 sliced onion

•2 tablespoons garlic powder

•1 (14-ounce) can diced no-salt-added tomatoes

•2 cups chopped kale

•2 tablespoons Dijon mustard

•3/4 teaspoon salt

•1 teaspoon black pepper

•2 (14-ounce) cans low-sodium cannellini beans

DIRECTIONS:

1. Heat oil over medium heat in a medium skillet.

2. Brown pork on all sides and transfer to a slow cooker. Add chicken broth and onion slices to the slow cooker, and cook on low for 5 hours.

3. Shred or cut pork into bite-sized pieces.Add garlic powder, tomatoes, kale, mustard,salt, pepper, and beans to the slow cooker.

4. Cook for an additional hour.

Of course, when Kelly joins us for What's Cookin'?, she always brings in a dish that can effectively feed a family for a relatively low cost.  Pork with Greens and Beans is the perfect example.  According to the UK Cooperative Extension's recipe, the estimated cost to make this recipe is just $9.46. That breaks down to just $1.58 per serving.
