L.S. of Georgetown, who sent in this recipe, writes, “The amounts given in this recipe will serve a meal for one or two. You could double it for more servings. The spice cumin lends a real Southwestern flair to this main dish. The baked pork chops pick up extra flavor from the well-seasoned rice. Sometimes I use celery instead of green pepper and boneless skinless chicken breasts instead of the pork chops.”

Pork Chops with Cumin Rice

Ingredients

2 bone-in pork chops, 3/4-inches thick
1/4 teaspoon salt, 1/4 teaspoon pepper
1 tablespoon vegetable oil, walnut oil, or avocado oil
1 teaspoon chicken bouillon granules or use Better Than Bouillon if you prefer
1 cup hot water
1/2 cup uncooked long-grain rice
2 tablespoon chopped onion
2 tablespoon chopped green pepper (or celery, if you prefer)
2 teaspoons Worcestershire sauce
1/2 teaspoon ground cumin

Directions

1. Sprinkle pork chops with salt and pepper. In a small ovenproof skillet, brown chops in oil for 2 to 3 minutes on each side. Remove and keep warm.

2. Dissolve bouillon in water; pour into skillet and stir to loosen the browned bits.

3. Stir in the rice, onion, green pepper, Worcestershire sauce and cumin.

4. Place the chops over rice. Cover and bake at 350 degrees for 15 to 20 minutes or until meat juices run clear and rice is tender. If using chicken, cover and bake for 40 minutes at 350.

5. Let stand for 5 minutes before serving.

Q: Is there a method to cooking meatballs so they don’t stick to the bottom of the pan? And mine often fall apart in the frying pan.

A: The best way to cook perfect meatballs is to forget the frying pan and roast them in the oven. Cook uncovered at 325 degrees for 40 to 50 minutes, depending on the size of your meatballs. Use a 13 x 9 baking pan sprayed lightly with cooking spray. Turn them once, if you like, but not required. Check for doneness by taking one out and cutting it to make sure it is fully cooked through. These meatballs should turn out more tender than using the frying pan method. They will also be more tender if you don’t overmix the ingredients for too long.

A helpful hint

You can use Greek yogurt as a healthy substitute for mayonnaise, sour cream and heavy cream.
