Summer entertaining season is in full swing and I for one could not be happier! The smell of propane and charcoal grills is in the air; and the best burgers, dogs, steak, chicken and ribs are being enjoyed coast to coast! If it can be cooked over an open flame, you can bet our family is enjoying it, but the protein I find to be one of the best buys at the store this time of year is definitely pork!

From pork ribs and pork chops, to pork tenderloins and pork roasts, pork takes on flavor so well and barbecues beautifully. But if you live in the city and don’t have a grill, or Mother Nature seems to always ruin your outdoor plans, don’t worry because you can achieve great-tasting barbecue pork indoors too. When you hear the word barbecue do you immediately think of the sauce or the technique? See when I hear barbecue I assume something is going on my plate slathered in some tasty barbecue sauce, but I know for others when they say “let’s have a barbecue” they simply mean let’s grill food outside and have fun.

For many the words barbecue and cookout have become interchangeable. There’s nothing wrong with that, as long as you know what you’re walking into! Because of the versatility of the word barbecue though, I have included recipes that are grilled and ones that are baked, or prepared in the slow cooker or instant pot too.

What Are The Different Types Of Barbecue?

If you weren’t aware, there are four distinct types of ‘cue here in America, hailing from Kansas City, Memphis, Texas and The Carolinas. They each of a distinct flavor profile and barbecue experts can tell them apart after one bite.

  • Kansas City: Known for its tasty tomato-based sauces, this type can be sweet, spicy, tangy or a combo of all three. It also uses a wide variety of meats including beef, pork, chicken, turkey, mutton and sometimes even fish.
  • Memphis: This type of barbecue is known for mainly using pork, usually shoulders and ribs. The ribs can either be dry rubbed or wet. Dry rubbed ribs are eaten without sauce and wet ones are sauced before, during and after cooking.
  • Texas: This category is actually divided into East, South, Central and West, with all of them mainly using beef. East is known for its sweet tomato-based sauce. South features thick molasses sauces that help to keep the meat moist. Central uses dry spice rubs. West uses indirect heat to cook the meat with mesquite wood
  • The Carolinas: Barbecue is usually pork and the sauce can either be tomato based or the well known vinegar sauce known as “Carolina Gold.”
