Here is an easy stir fry recipe that is tasty and quick to prepare. You can also add sliced mushrooms to the ingredients if you like, as well as asparagus.
Sesame Beef
Ingredients
1 pound boneless beef sirloin steak, thinly sliced
1/2 cup teriyaki marinade or sauce
3 medium green onions, finely chopped (3 tablespoons)
2 cloves garlic, finely chopped or 1-1/2 teaspoons prepared minced garlic
1 tablespoon vegetable oil or sesame oil
4 cups hot cooked rice
1 tablespoon sesame seeds, toasted if desired
Optional: Add sliced mushrooms and/or asparagus if you like
Directions
1. Cut beef diagonally across grain into 1/8-inch slices. (Hint: Beef is easier to cut thin if partially frozen, about 1-1/2 hours.)
2. Mix teriyaki marinade, onions and garlic in a medium-size glass or plastic bowl. Stir in beef until well coated. Cover and refrigerate 30 minutes.
3. Remove the beef from the marinade; reserve marinade.
4. Heat oil in 10-inch skillet over medium-high heat. Cook beef mixture in oil, stirring occasionally, until beef is browned.
5. Stir in marinade. Heat to boiling; boil and stir one minute.
6. Serve beef mixture over rice. Sprinkle with sesame seeds.
Questions for the cook
R.R. of Garden Valley asks:
Q: I think I am behind the curve; I see ads for calzones and see them listed on restaurant menus, but I don’t know what’s in them; can you describe them for me?
A: Calzones originated in Naples, Italy; it is a half-moon shaped stuffed pizza, so to speak.
It is usually made as an individual serving. The fillings can be various meats, vegetables, and/or cheese. Mozzarella is the cheese used most frequently. Calzones can be deep fried or brushed with olive oil and baked.
A helpful hint
If you like iced coffee, try this: Freeze left-over coffee into ice trays. Put them in your iced coffee and it won’t dilute your drink.
