Once temperatures begin to drop, we begin to think less about grilling and barbecuing meats outside and more about preparing roasts and crockpot dishes, which typically require less close supervision.
Since most roasts are very lean, they can end up a little on the dry side, making them hard to slice and tough to eat. However, if you make a roast using Coca-Cola, you will be amazed at how tender and moist your beef roast will turn out.
You might worry the cola might leave the meat, gravy or vegetables, if you cook those with the roast, tasting sweet when the dish is done, but they won’t. Instead, they’ll be juicy and delicious.
Serve this roast with a pear salad and a glass of fresh lemonade for a wonderful autumn dinner!
COCA-COLA ROAST BEEF
2-3 pound cut of lean roast beef
1 (12-ounce) can Coca-Cola (or any brand of cola drink)
Salt and pepper to taste
1/2 teaspoon onion powder
1 teaspoon garlic/parsley seasoning
1 envelope dry onion soup mix
2 teaspoons dried parsley flakes
1 cup water
Brown roast beef lightly on all sides in heavy skillet in 2 tablespoons of vegetable oil. Drain off fat and place in a crockpot or slow cooker. Add 1 cup of water. Sprinkle roast with salt, pepper, onion powder, garlic/parsley seasoning, dried parsley flakes and envelope of dry onion soup mix and then pour Coca-Cola around roast.
Allow roast to cook on HIGH for 45 minutes to 1 hour.
Turn roast over and lower heat to LOW for an additional 4 hours
Note: If you wish to add quartered potatoes and baby carrots, they can be added with the roast at the beginning.
PEAR SALAD
Loose lettuce leaves
1 (15-ounce) can pear halves
1 (3-ounce) package cream cheese, softened
1 tablespoon sugar
1/4 cup chopped pecans
6 maraschino cherries
Place a bed of lettuce leaves in a small plate. Arrange pear halves in a circle on top of lettuce leaves.
Combine softened cream cheese, sugar and nuts and mix until smooth. Evenly divide cheese mixture and spread on top of pear halves. Place a maraschino cherry on top of each pear. Chill for an hour and serve.
