This recipe was submitted by R.E. of Kelsey, who says, “This crockpot pork chop dish is fancy enough for company but also makes a great family meal. Many of these ingredients you may already have on hand.”

Crockpot Tangy Pork Chops

Ingredients

4 pork chops (1-1/2 inches thick)

1/2 teaspoon salt

1/8 teaspoon pepper

2 medium onions, chopped

2 celery ribs, chopped

l large green pepper, sliced

1 14.5 ounce can stewed tomatoes

1/2 cup catsup

2 tablespoons cider vinegar

2 tablespoons brown sugar

2 tablespoons Worcestershire sauce

1 tablespoon lemon juice

1 beef bouillon cube, or use 1 tablespoon Better Than Bouillon paste, beef flavor

2 tablespoons cornstarch

2 tablespoons water

Hot cooked rice, optional

Directions

1. Place chops in a slow cooker; sprinkle with salt and pepper.
2. Add the onions, celery, green pepper and tomatoes.
3. Combine catsup, vinegar, brown sugar, Worcestershire sauce, lemon juice and bouillon; pour over vegetables. Cover and cook on low for 5-6 hours.
4. Mix the cornstarch and water together until smooth; stir into liquid in the slow cooker.
5. Cover and cook on high for 30 minutes or until sauce is thickened. Serve over rice, if desired.

Q: My mother says every cook should have a Dutch oven; she swears by hers. What specifically is so great about using a Dutch oven?

A: A Dutch oven is a large 4- to 6-quart pot, almost always made of cast iron. It has a tight-fitting lid so steam cannot readily escape. It is used for moist-cooking methods, such as braising and stewing.

Dutch ovens are said to be of Pennsylvania Dutch heritage dating back to the 1700s. Probably the majority of American households today use a crockpot (also known as a slow cooker) in the same way, although many cooks contend that cooking in a heavy wrought iron pot brings out more flavor in the dishes cooked in it.

You can get your pot roast, stew meat, or chicken, for example, browned nicely in a Dutch oven first, then continue cooking and adding items to it.

Some people like cooking in a heavy iron pot for nutritional reasons, due to the fact that cooking in a cast iron skillet or Dutch oven provides significant amounts of iron to your food. The ingredients cooked this way for longer periods of time absorb iron that isn’t provided from food that is heated more quickly.

A helpful hint

To melt chocolate successfully, chop it or use chocolate chips and melt in the microwave for 30-second intervals, stirring each time until completely smooth.
