Backyard barbecue season is here—and we are staving. If you’re tired of the same old summer recipes party after party, we hear you. Why not switch things up with totchos? A big cookout always means a fridge full of leftovers and totchos (AKA tater tot nachos) are the best way to use ’em up! Plus, if your cookout included some tasty barbecue, my Pulled Pork Totchos are going to be your new go-to dish.

What Are Totchos?

If you’ve never had them, you might be a tad confused right now. Don’t worry, it’s really a simple answer. Think nachos, but made with tater tots, so now you have totchos. It’s cute, fun, kid friendly and just another way to play with our food. Crispy tater tots covered in an array of toppings normally saved for tortilla chips, this time being pulled barbecue pork! In fact, this recipe came to be because my oldest son loves pulled pork nachos and told me he thought it would be yummy if I did the same thing with tater tots! Mission accepted!

The sky’s the limit when it comes to creating totchos. You can use leftover pulled pork, or store bought. If you haven’t tried the tubs you can find in the meat section at the grocery store, I urge you to. I use them quite a bit in recipes when I don’t want to save a little time! Top them with whatever your favorite nacho fixings are. You can even make it a fun hands-on meal and let everyone make their own plate with a totchos bar!

How To Make Pulled Pork Totchos

I chose to use store-bought pulled pork, but either way you will want about 2 pounds for every bag of tater tots. I like to cook my tater tots on a baking sheet for an extra 10-15 minutes so they are extra crispy. You want them to be able to stand up to all the delicious topping without getting super soggy.

No matter if you’re using leftover pulled bbq pork, or store bought, my favorite way to heat it up is in a large skillet over medium-low heat. I stir it to break it up, and once it’s heated through, I lower the burner to warm and pop a lid on it. That way when the tots are baked, the pork is waiting on me.

While your pork is waiting and the tater tots are finishing in the oven, grab all your favorite toppings! For this batch I set out shredded sharp cheddar, sour cream, chopped chives and pickled jalapeños. My boys also love salsa, sliced black olives and diced tomatoes. I think some chopped avocado would put these totchos over the top!

Pulled Pork Totchos could definitely be an entire meal, but I served a tossed salad alongside ours and it was a really nice combo. However you top them, or serve them, I know this fun twist on nachos is going to be a big hit with your family, and a new easy weeknight meal for you!

Pulled Pork Totchos

Ingredients

  • 2 lbs barbecued pulled pork, store bought or left over
  • 1 (32-oz) bag frozen tater tots
  • 2 cups shredded sharp cheddar cheese
  • sour cream
  • pickled jalapenos
  • chives
Key Tags

Directions

  1. Bake tater tots according to package directions, until crisp.

  2. Place barbecued pork in a large skillet over medium-low heat.

  3. Stir pork until heated through.

  4. When tater tots are cooked, divide equally among serving plates.

  5. Top with pork.

  6. Add toppings.

Cook's Note

I always add 10-15 extra minutes to the recommended cooking time for tater tots to make sure they are extra crisp.
